Black Bean Frittata

Ingredients

  • 1 cup salsa
  • 1 tsp chopped cilantro
  • 2 tsp vege oil
  • 1/2 chopped scallions
  • 3 cups crushed tortilla chips
  • 4 lightly beaten egg whites
  • 3 lightly beaten eggs
  • 15 oz black beans, rinsed and drained
  • 2 Tbsp sliced jalapenos
  • 1/4 tsp cumin
  • 1/2 cup shred sharp ched
  • salt and pep

Preparation

Step 1

Heat broiler. In a small bowl combine salsa and cilantro. In a large skillet, heat oil over med heat-add scallions and chips-saute 2 mins. Remove from heat. In a med bowl, add whites, eggs, beans and jalas-pour into skillet. Sprinkle with cumin. Wrap handle in foil place skillet in oven. Broil 2 1/2 mins or until center is set. Sprinkle with chz. Broil 20 secs or until chz melts. Cut in wedges and serve with salsa and other toppings.
