Ingredients

  • 5-6 medium zucchini, sliced in 1/8" thick slices
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 3-4 sprigs of thyme
  • 1/2 cup shredded parmesan
  • 1 cup panko bread crumbs
  • Olive oil
  • Salt & pepper, to taste

Step 1

Heat cream, garlic, and thyme sprigs in small saucepan until it just begins to boil. Remove from heat and discard thyme sprigs (leaves will have fallen off).
In buttered baking dish, layer zucchini, salt, pepper, sprinkle of parmesan, bread crumbs, drizzle of heavy cream mixture. Repeat layers until pan is almost full. Finish top layer with bread crumbs, parmesan cheese, and drizzle of olive oil. Bake at 350 degrees for 20-25 minutes or until golden brown and bubbly.
