Ingredients
- 6 C. cold mashed potatos
- 4 egg whites, lightly beaten
- 2 1/4 C. shredded cheddar cheese
- 1 / 1/2 C. chopped green onions
- 1/4 C. real bacon, cooked and diced
- 1 1/2 C. panko bread crumbs
- Oil for frying
Preparation
Step 1
PLace the mashed potatoes in a bowl; let stand room temperature for 30 mins. Stir in the egg whites, cheese, onions, and bacon. Shape into 1"balls and roll in breadcrumbs. Let stand for 30 mins in freezer. In fryer or deep skille, fry potato balls a few at a time 2 1/2 to 3 mins. or until golden brown. Remove with slotted spoon and set on paper towels to drain. Serve warm.
