Ingredients
- 3 cups low sodium beef broth
- 1 1/2 cups uncooked orzo pasta
- 1 (11-oz.) can whole kernel corn, undrained
- 1 (4.5-oz.) can diced green chilies
- Water/oil mixture
- 2 teaspoons olive oil
- 1/2 pound extra-lean stir-fry beef
- 1 medium green bell pepper, cut into 1/4-inch strips
- 1/4 cup chopped fresh cilantro

Preparation
Step 1
In a 2-quart saucepan with a tight-fitting lid, combine broth, pasta, corn and chilies. Bring to a boil then reduce heat, cover and simmer for 10 minutes or until pasta is just tender; remove from heat and let stand for 5 minutes or until most of the liquid is absorbed. Meanwhile, spray a large skillet with water/oil mixture over medium-high heat; add oil and cook beef and bell pepper for 5 minutes, stirring occasionally, or until beef is brown. Stir beef mixture into pasta mixture. Stir in cilantro and serve.
SERVING SUGGESTION: Stir-fried zucchini, yellow squash and grape tomatoes.
