MALLOW DATE ROLL

My maternal grandmother made this every Christmas and served it with whipped cream - delicious!

Ingredients

• 3 cups graham cracker crumbs
• 1 1/2 cups finely chopped pitted dates
• 1 cup chopped walnuts
• 4 cups miniature marshmallows
• 1 cup crushed pineapple with syrup
• 1/2 cup heavy cream

Preparation

Step 1

Reserve 1/2 cup graham cracker crumbs. Combine remaining crumbs with dates, nuts, marshmallows and pineapple with syrup. Add cream and mix well. Spread crumbs on waxed paper, turn out date mixture onto crumbs, shape into roll, covering outside with crumbs. Wrap in wax paper and chill overnight. Cut into slices and serve with a dollop of sweetened whipped cream.
