Ingredients

  • Marinade:
  • 2 lemons
  • 6 cloves garlic
  • 2 1/8 " thick slices peeled ginger
  • 1 t dried majoram
  • 1 t ground coriander
  • 1 t ground cumin
  • 1/2 t grund turmeric
  • 1/8 t cinnamon
  • Pinch saffron threads
  • 1 t light brown sugar
  • 2 1/2 t kosher salt
  • 2 t grund pepper
  • 3 T olive oil
  • Kababs:
  • Cut chicken into 2" chunks
  • 1 Vidalia cut in 1" pieces
  • 1 red bell pepper, cut in 1" squares
  • 1 yellow bell pepper, cut in 1" squares
  • 2 T chopped parsley

Preparation

Step 1

Mix marinade ingredients and add chicken chunks; Marinate for 1 hr.
Cut up vegetables.
alternate chicken pieces with pepper and onion pieces on skewers and grill, turning frequently til cooked thru.
