Ingredients

  • 2 pounds potatoes, peeled and cut into 1/4-inch-thick slices (about 6 cups)
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 3/4 cup water
  • 2/3 cup cider vinegar
  • 1/4 cup sugar
  • 1 tsp salt
  • 3/4 tsp celery seeds
  • 1/4 tsp ground black pepper
  • 6 slices bacon, crisp-cooked, drained, and crumbled
  • 1/4 cup snipped fresh parsley
  • 1 Tbsp snipped fresh dill

Step 1

1. In a 3 1/2- or 4-quart slow cooker combine potatoes, onion, and celery. In a bowl combine water, vinegar, sugar, salt, celery seeds, and pepepr. Pour oven potatoes.

2. Cover, cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Stir in bacon and parsley. Garnish with snipped dill.
