Ingredients
- 2 lbs yellow squash, sliced
- 1 cup sour cream
- 2 Tbsp flour
- 2 egg yolks, beaten
- 2 egg whites, stiffly beaten
- 1 1/2 cups cheddar, shredded
- 8 slices bacon, cooked crisp and crumbled
- 1/3 cup fine dried bread crumbs
- 1 Tbsp butter

Preparation
Step 1
Boil squash in salted water until tender and drain. Combine sour cream, egg yolks, and flour. Fold in egg whites. In 12x7.5x2 baking dish, layer half squash, half egg mixture, half cheese, and half of bacon. Repeat layers. Combine bread crumbs and butter. Place on top of casserole. Bake uncovered at 350 degrees for 20-25 minutes.
