Ingredients
- 4 medium sweet potatoes, peeled and cut into jo-jo's or rounds
- 1 1/2 cups white sugar, divided
- 6 Tbsp butter, melted

Step 1
Boil potatoes in water plus 3/4 cup of sugar until potatoes are barely tender. Save 1 cup of water in case needed. Place melted butter in 9x13 baking dish. Roll each potato piece in butter and arrange in dish. Sprinkle with remaining 3/4 cup of sugar. [Can be placed in fridge at this point.] Bake at 400 degrees for 1 1/2 hours, basting with sugary butter from bottom of dish. If dries out, use retained sugar water to continue basting.
