Ingredients
- 2 1/2 lbs. cooked chicken, diced
- 1/4 C green pepper, minced
- 1/4 C onion, minced
- 1/4 C celery, diced
- 2 cans cream of mushroom soup
- 1/4 C pimentos, diced
- Mustard
- 8 oz. cornbread mix
- 8 oz. chicken stock, double strength
- 1/4 cup butter, melted

Preparation
Step 1
Combine chicken and other ingredi¬ents in a large bowl. Stir well. Pour into a 9" x 14" pan or individual casserole dishes.
For cornbread crust:
Preheat oven to 350° F. Combine in large bowl. Stir well. Sprinkle over casserole(s). Bake 15-20 minutes or until crust is golden and casserole is bubbly.
