Ingredients
- Layer four sheets of phyllo pastry, brushed with butter, in a pie or baking dish and top with a mixture of :
- Spanikopita
- 6 eggs (whisked)
- 1 pkg of drained (thawed) frozen spinach
- ½ pound of crumbled feta cheese (cheapest kind, Canadian is fine)
- salt
- pepper

Cooking time 45mins
Preparation
Step 1
Fold back edges of pastry into centre over top of pie. Or put two layers of pastry on bottom of 9x 12 pan an 2 or 3 layers on top of filling.
Cook at 350 degrees for 45 min. or less
Note re phyllo pastry: brush butter on it fresh from refrigerator or it breaks as it warms up.
Extra can be kept in freezer
Use softened not melted butter, and brush on with a pastry brush.
