  • 2 pounds potatoes
  • 1/2 cup of the vinaigrette
  • 2 tablespoons parsley
  • salt and pepper
  • Vinaigrette
  • 3 tablespoons red wine vinegar
  • 6 tablespoons extra virgin olive oil
  • 2 T Dijon mustard
  • 2 t. salt

Preparation

Step 1

Set in a big pot, and cover with cold water. Bring to a boil then reduce to simmer and cook for about 10-15 minutes.

Add the vinaigrette while still warm. It’s good hot or cold.
