Ingredients
- 8 oz. caster sugar
- 4 eggs, separated
- 8 oz. ground almonds
- 3 oz. plain chocolate
- 1 T. double cream
- 2 oz. almonds and walnuts to decorate
- Icing sugar, to dust

Step 1
1. Pre-heat oven to 375'F and line a cake tin with baking parchment.
2. Beat sugar with egg yolks until creamy and white, stir in ground almond.
3. Beat egg whites until stiff and fold into the mixture. Spoon the mixture into the tin and bake for about 30-40 minutes (pierce with a skewer to check the cake is cooked).
4. Remove from the tin, cool on a cake rack and peel off the baking parchment.
5. Melt the chocolate in a basin over hot water, stir in cream, smooth thinly over the cake and decorate with chopped almonds, halves of walnuts and a dusting of icing sugar.
