Ingredients

  • Dough:
  • 1 pkg yeast
  • 2/3 cup water
  • 2 + cups flour
  • 2/3 tsp salt
  • 1/3 cup cornmeal
  • 1 2/3 T olive oil
  • 3 2/3 T corn oil
  • 2/3 T sugar
  • Topping:
  • 4 cans diced tomatoes, well-drained and crushed to remove juice
  • 1 1/3 t fresh chopped basil or 2/3 tsp dried
  • 1 1/3 t fresh chopped oregano or 2/3 tsp dried
  • garlic
  • salt
  • 1 lb mozzarella cheese
  • 1/4 cup Parmesan
  • 1/2 lb Italian sausage (casings removed)
  • olive oil

Preparation

Step 1

Preheat oven to 475. (If using pizza stone, place into cold oven.)

Partially cook the sausage.

Combine the flour, cornmeal, and salt. Add yeast, sugar, water, and (last) oil. Knead until firm and elastic. Dust with flour and place into a floured bowl. Rise until doubled. Oil deep dish pan and spread dough into it. Prick bottom with fork and bake 4 minutes. Brush the dough with oil.

Lay cheese over crust. Mix basil, oregano, and garlic with tomatoes and spoon tomatoes over the cheese. Sprinkle Parmesan over tomatoes. Put the partially cooked sausage over surface, and drizzle 2 tsp olive oil over top.

Bake at 475 on bottom rack for 5 minutes. Move to upper rack and bake an additional 20, until sausage is cooked and crust is browned.
