Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 5 tblspns fresh basil
  • 3 tblspns green onion
  • 1 can diced tomatoes
  • 1 tblspn red pepper flakes
  • 1/2 tspn thyme
  • 2 tspns garlic powder
  • 1/2 cup + 1/2 cup grated low-fat cheese
  • (I used 1/4 cup cheddar and 1/4 cup mozzarella to make up each half cup)
  • 1/2 cup coarsely grated Parmesan
  • Salt and fresh ground black pepper to taste

Preparation

Step 1


Cut your zucchini and squash into little half moons and slice up your basil and green onion.

Preheat oven to 350 degrees. Grab an 8" x 8" dish and spray it with non-stick.

Combine everything except the extra 1/2 cup of cheese in a bowl and mix it all up and season with salt and pepper to taste.

Pour into the baking dish and bake (uncovered) for 20 minutes


Add the extra 1/2 cup of cheese on top and put it back in the oven for another 10 - 15 minutes
