  • 1/4 C. (1/2 stick) butter or
  • margarine
  • 1 C. unsifted all-purpose flour
  • 1 C. unsifted whole-wheat flour
  • 2 tsp. baking powder
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 2 C. milk
  • 1/4 C. honey
  • 3 large eggs, separated, at room
  • temperature

Preparation

Step 1

1. Heat waffle iron following manufacturer's directions, In 1-quart saucepan, or heatproof bowl in microwave oven, melt butter over low heat. Set aside to cool slightly,

2. In medium-size bowl, combine all purpose and whole-wheat flours, baking powder, sugar, and salt.

3. Beat milk and honey, then egg yolks, into melted butter. Stir into flour mixture just until moistened.

4. In small bowl, with electric mixer, beat egg whites until stiff peaks form. Fold into waffle batter just until blended.

5. Ladle or pour enough batter over hot waffle iron to cover two-thirds of grid. With metal spatula, spread batter to edges of grid. Close lid and cook until steam stops - about 5 minutes. Keep waffles warm in low oven while repeating with remaining batter.

6. Prepare Cranberries in Syrup, if desired. Serve over waffles.
