Ingredients
- 3-4 chicken breasts
- 1 small white onion, chopped
- 4 celery stalks, thinly sliced
- 1 lb spaghetti
- 1 can cream of mushroom soup
- 1 can sliced mushrooms (or 1 cup fresh sliced mushrooms)
- 1-2 cans Rotel, drained
- 2 lbs Velveta, diced

Preparation
Step 1
Boil chicken breasts in just enough salted water to cover. DO NOT DRAIN! Remove chicken from water, cool, and shred. Add onion, celery, and spaghetti to boiling broth. Boil all until tender. Add soup, mushrooms, rotel, and velveta. Stir constantly and cook until almost thickened. Add chopped chicken and cook over low heat until thickened.
