Ingredients
- Doe
- 5 lbs. of flour
- 1 cup yeast (melted)in lukewarm water
- 1 handful of salt
- 8 tblsps. oil
- 1 stick margarine
- 2 eggs (beaten)
- Water
- Filling
- 3 lbs.of Ricotta
- 2 sticks of sausage (for pizza)
- 1/2 lb. of salami; skin removed (for pizza)
- 1/4 lb. of grated cheese
- Parsley (cut up)
- 1 tblsp. Salt
- Couple of pinches of pepper
- 8 whole eggs
- 1 egg + 2 yolks (egg wash for top)

Preparation
Step 1
Doe
Mix dry ingredients together. Make a well in middle and add wet ingredients. Knead on floured surface with floured hands. Cover with towel and let it rise for 2 1/2 hours.
Filling
Mix ingredients together. Cool in refrigerator.
Top rolled out doe with filling and fold over.
Bake in a 450 degree oven for 1 - 1 1/2 hrs., then lower to 350 degrees.
