Ingredients

  • Doe
  • 5 lbs. of flour
  • 1 cup yeast (melted)in lukewarm water
  • 1 handful of salt
  • 8 tblsps. oil
  • 1 stick margarine
  • 2 eggs (beaten)
  • Water
  • Filling
  • 3 lbs.of Ricotta
  • 2 sticks of sausage (for pizza)
  • 1/2 lb. of salami; skin removed (for pizza)
  • 1/4 lb. of grated cheese
  • Parsley (cut up)
  • 1 tblsp. Salt
  • Couple of pinches of pepper
  • 8 whole eggs
  • 1 egg + 2 yolks (egg wash for top)

Preparation

Step 1

Doe

Mix dry ingredients together. Make a well in middle and add wet ingredients. Knead on floured surface with floured hands. Cover with towel and let it rise for 2 1/2 hours.

Filling

Mix ingredients together. Cool in refrigerator.
Top rolled out doe with filling and fold over.
Bake in a 450 degree oven for 1 - 1 1/2 hrs., then lower to 350 degrees.
