Ingredients
- 1 1/2 C. unsifted all-purpose flour
- 1/4 C. light-brown sugar
- 1 T. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 large egg
- 1/2 C. milk
- 1 C. cooked, mashed, sweet potatoes
- 1/4 C. butter or margarine, melted
- 1/2 C. dark seedless raisins

Preparation
Step 1
1. Heat oven to 400°F. Grease 12 muffin cups.
2. In a medium-size bowl, combine flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
3. In a small bowl, beat together egg, milk, sweet potatoes, and butter. Add to dry ingredients. Stir just until dry ingredients are moistened. Stir in raisins.
4. Spoon mixture into muffin cups; bake 15 to 20 minutes or until lightly browned. Serve warm.
