Ingredients
- 1/2 cup yellow cornmeal
- 2 cloves garlic, pressed
- 4 (6-oz.) catfish fillets
- 1/4 cup skim milk
- 1 teaspoon Cajun seasoning
- Water/oil mixture
- 2 teaspoons canola oil, divided

Preparation
Step 1
In a shallow dish, combine cornmeal and garlic. Brush fillets with milk and sprinkle with Cajun seasoning; dredge in cornmeal mixture, pressing gently to coat. Coat a large skillet with water/oil mixture over medium heat and add 1 teaspoon of canola oil. Add 2 fillets to the pan and cook for 5 to 6 minutes per side or until fish flakes easily when tested with a fork. Remove fillets from pan and keep warm. Wipe drippings from pan with a paper towel. Repeat procedure with cooking spray, remaining canola oil and 2 fillets.
SERVING SUGGESTION: Corn on the cob and steamed green beans tossed with a little butter and slivered almonds.
