Ingredients
- Water/oil mixture
- 4 (4-oz.) boneless skinless chicken breast halves
- 2 tablespoons flour
- 1 large onion, sliced
- 2 medium apples, cored and sliced
- 1 cup apple cider
- 1 cup low sodium chicken broth
- 1/2 teaspoon ground ginger
- 2 teaspoons cornstarch

Preparation
Step 1
In a large skillet with a tight-fitting lid, heat water/oil mixture over high heat. In a medium bowl, toss chicken with flour, patting off excess; add to skillet and brown well on both sides. Remove from pan and set aside. Reduce skillet heat to low; add onion and saute, stirring often, until tender and lightly browned. Stir in apples, cider, broth, ginger and browned chicken. Bring to a simmer, cover and cook for 30 minutes. Using a slotted spoon, transfer chicken, onions and apples to a serving dish. In a small bowl, whisk together cornstarch and 2 to 3 tablespoons of pan juices; add to skillet and simmer for 1 minute, whisking constantly. Pour sauce over chicken and serve.
SERVING SUGGESTION: Baked sweet potatoes (if you like, nuke in microwave to keep your kitchen cool). Add steamed broccoli.
