Ingredients
- 2 C. 100% Bran
- 1 1/4 C. skim milk
- 1 C. all purpose flour
- 1/3 C. firmly packed light brown sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 C. margarine, melted
- 1/4 C. Egg Beaters
- 1/2 C. each chopped apple and seedless raisins

Preparation
Step 1
1. Preheat oven to 400 degrees or use microwave.
2. Mix bran and milk, let stand 5 minutes. Blend flour, sugar, baking powder and baking soda; set aside.
3. Mix margarine and Egg Beaters into bran mixture. Stir in flour mixture just until blended. Stir in apple and raisins.
4. Fill 6 paper lined microwave muffin pan cups 2/3 full. Cook at HIGH (100% power) 2-2 1/2 minutes or until toothpick comes out clean, rotating pan after 1 minute. Remove from pan; repeat procedure. Serve warm.
Conventional Oven: Fill 12 greased 2 1/2 inch muffin pan cups with batter. Bake at 400° for 18-20 minutes.
