Ingredients

  • 1 C. buttermilk
  • 2 C. whole wheat flake cereal (like Nutri-grain)
  • 1 C. whole wheat flour
  • 1/2 C. finely chopped pared apple (about 1/2 medium apple)
  • 1/4 C. unsweetened apple juice
  • 1/4 C. molasses
  • 1 egg
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon

Preparation

Step 1

1. Heat oven to 400°degrees. Line 12 medium muffin cups, 2 1/2 by 1 1/4 inches with paper baking cups; spray with nonstick cooking spray.

2. Pour buttermilk over cereal in medium bowl. Let stand until cereal is soft, about 5 minutes. Stir in remaining ingredients all at once, just until flour is moistened.

3. Fill cups about 3/4 full. Bake until wooden pick inserted in center comes out clean, about 20 minutes. Remove from pan immediately.

This recipe can be doubled and can be made with egg substitute.
