BOILED*****Perfect, Peelable Hard-Boiled Eggs

Step 1
Add a dozen ice cubes to a large bowl and fill with water. Use eggs directly from the fridge. Do not prick ends of eggs.
*Perfect Steamed Boiled Eggs:*
Fill a large pot with 1 inch of water and bring to a boil over high heat. Add eggs in steamer basket to pot, cover, and continue cooking 6 minutes for soft boiled or *12 minute for hard*. If serving cold, immediately place steamer basked and eggs in a bowl of ice water and allow to cool for at least 15 minutes (it was more like 2 hours) before peeling under cool running water. Store in the refrigerator for up to 5 days.
*Perfect Boiled Eggs:*
Bring water to a boil in a large pot. Carefully lower eggs into pot and continue to boil for 30 seconds. Cover tightly, reduce heat to low (water should maintain a bare simmer), and continue cooking for 11 minutes. Immediately place eggs in a bowl of ice water and allow to cool for at least 15 minutes before peeling under cool running water. Store in the refrigerator for up to 5 days.
*TIPS*:
To Peel: One last factor that improves your chances of a successful peel, and it's a major one: make sure to chill your eggs completely. Let them sit in that ice bath for at least 15 minutes, or better yet, let them sit overnight in the fridge. The cooler the egg is, the firmer and tighter its structure will be, and the less likely is it to develop craters when you pry off the shell.
Crack them gently all over their surface, starting at the fat end and gently rotating and tapping all around, then peel under running water.
