Ingredients
- Topping:
- 1 16-ounce package wide egg noodles
- 1 cup butter or margarine
- 1/2 cup sour cream (fat-free okay)
- 6 eggs (or 1 1/2 cups egg substitute)
- 1 cup white sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 8 ounces chunky applesauce
- 1/4 cup raisins (optional)
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1/2 cup white sugar
- cinnamon
Preparation
Step 1
Preheat oven to 350 F. Grease a 9 x 13-inch baking dish with butter or cooking spray. Bring a large pot of lightly salted water to a boil and cook noodles 8 to 10 minutes, or until al dente. Add raisins during the last few minutes of cooking to allow them to plump. Drain noodles and raisins.
In a large bowl, mix butter, sour cream, eggs, sugar, lemon juice, vanilla extract and applesauce until well incorporated. Stir in drained noodles and raisins and pour into prepared dish.
To make the topping: Mix together graham cracker crumbs, butter and sugar until it looks like large crumbs. Sprinkle evenly over top of noodle mixture. Sprinkle top with cinnamon. Bake for 15 minutes. Lower oven to 325 F and continue baking for an additional 45 minutes. Allow to cool before cutting, and serve warm. Servings: 20.
