Chocolate Walnut Cake

Ingredients
- 1/2 c cocoa powder
- 3/4 c boiling water
- 1/2 c butter, softened
- 2 c sugar
- 1 8oz sour cream
- vanilla
- 1/2 tsp baking soda
- pinch salt
- 2 c flour
- 1/2 c walnuts chopped
- 3 egg whites
- 1 1/2 c semisweet chocolate pieces
- 1/3 c butter
- 3 1/2 to 4 c sifted icing sugar

Preparation
Step 1
Grease and flour 2 round baking pans and set aside
In small bowl stir together cocoa and boiling water until smooth; cool 15 minutes
In large bowl mix 1/2 c butter on med to hi speed for 30sec
Add sugar and beat until combined. Add cocoa mixture, 1/2c sour cream, vanilla, baking soda and salt; beat until combined. Using spoon stir in flour and nuts.
In medium bowl beat egg whites until stiff peaks form, Fold egg whites into sour cream mixture. Pour batter into prepared pans.
Bake 350F for 25-35 minutes. Cool in pans on wire racks for 10 minutes.
Frosting: in a saucepan melt semisweet chocolate and 1/3 c butter over low heat, stirring frequently. Remove from heat and cool 5 minutes. Stir in remaining sour cream. Gradually beat in enough of powered sugar to make frosting of spreading consistency.
To assemble, place cake layer top side down on serving plate. Spread with 2/3 c frosting. Place second cake layer top side up on top of frosted layer. Frost top and sides with remaining frosting. Garnish with chocolate curls. Store cake in refrigerator.
