Ingredients
- 6 oz Penne, cooked and drained
- 2 Tablespoons plus 2 teaspoons reduced cal margarine
- 3 Medium shallots, chopped
- 1/4 cup low sodium chicken broth
- 1 Tablespoon tomato paste
- 1/4 teaspoon crushed red pepper
- 1/4 cup heavy cream (less points if replace w ff half & half)
- 1 oz (2 Tablespoons) Vodka
- Grated Parmesan Cheese for topping (additional points)

Preparation
Step 1
In a medium nonstick skillet melt margarine, add shallots and saute until softened. Add chicken broth, tomato paste and pepper flakes. Cook stirring constantly until combined, about 1 minute.
Reduce heat to low, add cream & vodka. Stir constantly and cook for 2 more minutes until heated through. Do NOT let it boil!
Toss sauce with pasta & serve.
