Ingredients

  • 3 medium carrots
  • 2 medium bananas
  • 1/4 cup margarine
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 cups whole wheat flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 cup chopped walnuts

Step 1

Preheat oven to 350 degrees F. Grease a 12-cup muffin tin with margarine. Grate carrots (a food processor does this well) and set aside. Mash banana with a fork and set aside. In a mixing bowl, cream the margarine and the brown sugar until fluffy. Add egg and beat well. Stir in the mashed bananas. In a small bowl, mix together flour, baking powder, salt and baking soda. Add flour mixture to banana mixture. Do not overmix. Add grated, carrots, vanilla and nuts and combine carefully. Fill muffin tine and bake for 20-25 minutes or until a cake tester comes out clean.
