Ingredients

  • 12 ounces lean pork tenderloin
  • Water/oil mixture
  • 2 medium onions, sliced and separated into rings
  • 1 tablespoon brown sugar
  • 1/3 cup water
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons cornstarch
  • 1/4 teaspoon black pepper
  • 2 tablespoons snipped fresh parsley

Preparation

Step 1

Trim any visible fat from tenderloin then cut it crosswise into 1/2"-thick slices. Coat a large skillet with a tight-fitting lid with water/oil mixture over medium-high heat; add half of the pork slices and cook for 3-1/2 to 4 minutes or until slightly pink in the center and juices run clear, turning once. Remove from skillet and keep warm. Repeat with remaining pork. Re-coat the skillet with water/oil mixture and reduce heat to medium; add onions; cover and cook for 13 to 15 minutes or until tender. Uncover and raise heat to medium-high; stir in brown sugar; cook and stir for 4 to 5 minutes or until onions are golden. Meanwhile, in a small bowl, combine water, vinegar, cornstarch and pepper; carefully stir into onion mixture in skillet. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Return pork to skillet and heat through. To serve, transfer pork and onion mixture to a serving platter and sprinkle with parsley.

SERVING SUGGESTION: Baked butternut squash and steamed broccoli.
