Ingredients
- 1 cup finely grated carrots
- 1 cup cornmeal
- 2 tbsp oil
- 3/4 cup water
- 1 tbsp fructose (sugar)
- 1 tsp salt
- 2 eggs, separated
- 1 cup zucchini (grated), optional

Preparation
Step 1
Blend all ingredients except egg white. Beat egg whites until stiff and fold into mixture. Pour into an oiled baking loaf and bake in a 400 F oven for 25 minutes.
