Black Bean burgers W/ corn and asparagus salad

Ingredients

  • Black Bean Burgers
  • Corn and Asparagus Salad
  • 5 oz can black beans, rinsed & drained
  • (1/2 c whole wheat bread crumbs)
  • 1 large garlic clove, minced
  • 1/2 c minced red bell pepper
  • 1/4 c chopped purple onion
  • (1 1/2 t cumin)
  • (1/2 t salt)
  • (1 egg)
  • (3 T olive oil)
  • 3 ears of corn, boiled & removed from cob
  • 1 lb asparagus
  • 1/4 c purple onion, chopped
  • 1/4 c basil, chopped
  • (2 T balsamic vinegar))
  • (3 T olive oil)
  • (Salt & pepper to taste)

Preparation

Step 1

Mash black beans with a fork leaving some black beans
whole. Mix with breadcrumbs, garlic, pepper, onion, cumin,
salt and egg. Shape into small patties. Heat olive oil over high
heat. Brown burgers on each side for two minutes.
Shuck and clean corn. Place in large pot of cold water.
Bring to a boil and boil for 7 min. Remove from pot, cool and
remove kernels from cob. Steam asparagus in small amount
of water until soft-crisp, 5 - 6 minutes. Cut into ½” pieces.
Combine with corn, onion, basil, vinegar, olive oil, salt and
pepper. Toss well.
