Ingredients

  • 2 cups (500 ml) flour
  • 2 tsp (10 ml) baking soda
  • 1 tsp (5 ml) ground allspice
  • 1/4 tsp (2 ml) nutmeg
  • 1/2 tsp (3 ml) salt
  • 2 eggs, beaten
  • 1 cup (250 ml) brown sugar
  • 1 cup (250 ml) white sugar
  • 3/4 cup (175 ml) corn oil
  • 2 tsp (10 ml) vanilla
  • 2 cups (500 ml) grated zucchini
  • 1 cup (250 ml) raisins
  • 1 cup (250 ml) chopped almonds or walnuts
  • 2 cups (500 ml) peeled and diced pears

Preparation

Step 1

Sift together flour, baking soda, allspice, nutmeg and salt. Mix together eggs, sugars, oil and vanilla. Add dry ingredients to egg mixture then mix in zucchini, raisins and nuts; gently mix in pears. Pour mixture into 2 well-greased and floured 9-by-5-by-3-inch (23-by-13-by-8 cm) loaf pans and place in an oven preheated to 350 F (180 C). Bake 40 to 50 minutes or until bread tests done. Remove from oven and let cool in pan 10 minutes, then turn out of pan on rack to cool.
