Bibingka – A Filipino Rice Cake

Bibingka is a type of rice cake from the Philippines. It is usually served during the Christmas season. Traditionally a specially made terra cotta container is lined with a single large section of a banana leaf. It is placed over preheated coals and the rice flour and water mixture is poured into it. Another piece of banana leaf is added to the top and covered with more preheated coals. This is a simplified version for the American kitchen.

Ingredients

  • 1 lb sweet rice flour (glutinous)
  • 6 eggs
  • 5 t baking powder
  • 2 cups coconut or regular whole milk or 1 c of each
  • 1 1/2 c sugar (more or less)
  • 2 t vanilla
  • 1 c shredded coconut

Preparation

Step 1

Set oven to 350º.

Mix together all the ingredients except the shredded coconut.

Pour into a large glass pie plate or similar container.

Sprinkle shredded coconut across the top.

Bake 45-50 minutes, till top is lightly browned.

Test with a toothpick to be sure it is cooked through.
