Ingredients
- 5 cups oatmeal (old fashioned)
- 3/4 cup vegetable oil
- 1/4 cup honey
- 3/4 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 3/4 cup dark brown sugar
- 3/4 cup water
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 1 cup nuts
- 1 cup coconut
- 1 cup dried fruit of choice (raisins, dried apples, etc)

Step 1
1. In large bowl, combine oatmeal and salt.
2. In saucepan, combine honey, brown sugar, oil, water, vanilla, cinnamon and nutmeg. Heat gently until brown sugar is dissolved. Pour over oats. Mix well, being sure to coat all the oats. Spread onto cookie sheets.
3. Bake at 300 degrees for 20-25 minutes, stirring occasionally. (DO NOT OVERCOOK or it gets hard as a rock! I know this THE HARD WAY!) Cool, breaking up granola. Add desired fruits and nuts (and coconut - or you can add coconut the last ten minutes of cooking to taste it!) Serve with milk for breakfast. Can be stored in an airtight container for 3 months.
