Ingredients

  • 10 eggs
  • 2 c sugar
  • 1/4 t salt
  • 1 c cake meal
  • 1/3 c potato starch
  • juice of 1 lemon or orange; or, 1/2 lemon or
  • orange, juice and rind

Preparation

Step 1

Beat whole eggs for at least 20 minutes or until bowl is almost full.

Add sugar and salt and keep beating. Add cake meal and beat. Add juice and rind and beat. Add potato starch. Beat 1 minute or until mixed.

Pour into 10 inch, ungreased tube pan and bake at 350 degrees for 1 hour.

Turn upside down and allow cake to cool in baking pan.
