Ingredients
- 1 *1 (14 OZ) can quartered artichoke hearts, drained
- 2 *2 C grape tomatoes, halved
- 1/4 *1/4 C finely chopped red onion
- 1/4 *1/4 C sliced pepperoncini peppers (about 6)
- 3 *3 oz. part-skim mozzarella cheese, cut into 1/4" cubes
- 2 *2 T chopped fresh basil leaves
- 2 *2 T chopped fresh parsley
- 2 *2 T drained capers
- 1 1/2 *1 1/2 T cider vinegar
- 1/8 *1/8 tsp salt

Preparation
Step 1
Cut artichoke quarters in half lengthwise, place in zip lock plastic bag along with tomatoes and other ingredients. Seal bag: toss to coat. Chill 2 hours.
This marinated salad is easy to transport, just take it in the plastic bag, and transfer it to a serving bowl when you arrive.
