Ingredients

  • 1/4 cup softened butter
  • 6 tbsp sugar
  • 2 eggs, beaten
  • 1/4 tsp vanilla extract
  • 2 cups unsifted all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup milk
  • 1/3 cup grated mild cucumber, drained
  • 2/3 cup grated zucchini, drained
  • 1/3 cup finely chopped nuts
  • Canned pineapple chunks, well drained

Preparation

Step 1

Cream butter and sugar until light and fluffy; add beaten eggs and stir until blended. Stir in vanilla extract. Mix the 5 ingredients together, then add to creamed mixture alternately with milk, stirring just until well moistened after each addition. Gently fold in drained cucumber and zucchini and the chopped nuts. Fill buttered muffin tins 1/3 full, place a well-drained pineapple chunk on batter in each tin, and top with remaining batter, being sure tins are filled only 2/3 full. Bake in preheated 400 F oven for 20 to 25 minutes.
