SCONES - CAFE LATTE CAPUCCINO WHITE CHOCOLATE

Ingredients
- 4 large eggs, divided
- 1 1/2 C. buttermilk
- 2 tsp. vanilla extract
- 4 C. all purpose flour
- 3/4 C. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 4 tsp. double acting baking powder
- 1/2 C. fresh espresso coffee grounds
- 2 sticks (1 C.) cold butter
- 1 C. white chocolate chips
- 1 T. milk

Preparation
Step 1
1. Preheat oven to 375 degrees.
2. In a small bowl, whisk together 3 of the eggs, buttermilk and vanilla.
3. In a large bowl, combine flour, sugar, salt, soda, baking powder and espresso grounds. Cut in the cold butter until the mixture resembles coarse meal. Add white chocolate chips. Gently stir in the buttermilk mixture, combine just until a soft dough forms-don't over stir.
4. Drop dough by heaping tablespoons 2 inches apart onto 2 well buttered baking sheets.
5. In a small bowl, whisk remaining egg and the milk together and lightly brush the top of scones with this egg wash. Bake in preheated 375°F oven 8 minutes. Rotate baking sheets and bake another 5 to 7 minutes.
