Ingredients

  • ½

    pkg chili mix

  • 4-6

    chix breast

  • 1

    t oil

  • veggie spray

  • 1

    onion- chopped

  • ¾

    thinly sliced yellow bell pepper

  • ¾

    thinly sliced red bell pepper

  • 2

    c chicken broth

  • 2

    c water

  • salt/ pepper ½ bottle salsa

  • strips and shredded cheese

Directions

sprinkle chili mix in a shallow bowl and dredge chix in it. Heat veg oil with cooking spray in a large skillet over medium high heat. Add the chicken and saute 6 minutes on each side until chix is done. Remove chix. let cool cut diagonally. Add onion and peppers to skillet and saute for 3 min Add chick slices, broth, water salt and pepper. Bring to a boil. Simmer about30minutes. Add salsa and lime juice and simmer an additinal 10 minutes. can add tortilla stripes and cheese.
