- Streusel Topping:
- 1/3 c. light brown sugar, packed
- 1/2 tsp. ground cinnamon
- 2 tbsp. unsalted butter, melted
- Muffins:
- 4 tbsp. unsalted butter, melted and cooled
- 2/3 c. sugar
- 2 large eggs
- 1 tsp. vanilla
- 1 c. plain low-fat yogurt
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp salt

Step 1
Make streusel topping:
1. in small bowl, combine streusel ingredients and pinch together into large crumbs. Place bowl in freezer.
Make muffins:
1. Preheat oven to 375deg.
2. Line muffin tin with paper liners. In a large bowl, whisk butter, sugar, eggs, vanilla, and yogurt.
3. Stir in flour, baking powder, baking soda, cinnamon, and salt with spoon.
4. Fill each muffin cup with batter.
5. Scatter streusel topping over each muffin and press lightly on crumbs so they adhere to batter.
6. Bake til tops are golden, 17-20 min. Let muffins cool in pan set on wire rack for 5 min.
7. Remove muffins to rack to cool completely.
