Ingredients

  • 1 lb fresh mozarella di bufala, cut into 4 equal pieces
  • 8 1/2 " thick slices of firm white sandwich bread
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp fresh thyme leaves, roughly chopped
  • 1 tsp salt
  • grating of nutmeg
  • 1/4 cup extra virgin oilive oil
  • 2 tbsp unsalted butter

Step 1

Place cheese slices on 4 slices of bread. Cover with the remaining slices of bread and trim the crusts off to form squares.

In a shallow bowl, whisk eggs and add milk, thyme, salt and nutmeg and whisk to blend well.

In a 10-12" nonstick saute pan, heat 2 tbsp of oil over medium-high heat. Add 1 tbsp of butter and wait for the foam to subside. Dip 2 sandwiches into the egg mixture, turning to coat, and place in the pan. Cook until golden brown and flip to brown the other side. Transfer to a plate (if you are making many sandwiches you can transfer to a cookie sheet and keep in a warm oven until everything is finished). Repeat with the remaining oil, butter, and sandwiches. Serve hot.
