Ingredients

  • Salt
  • 2 C basmati rice
  • 1/4 C olive oil + 1 T
  • 1/4 C white wine vinegar
  • Freshly ground pepper
  • 2 med. tomatoes, diced
  • 1 med. red onion, minced
  • 1 C chopped cilantro
  • 1/2 c finely chopped Kalamata olives

Preparation

Step 1

1. Bring large pot of water to boil & add salt. Stir in rice & boil over mod. hi heat just til tender, @ 15 min.
Drain & transfer to large bowl. toss rice with rubber spatula from time to time to cool to room temperature
2. In small bowl, mix olive oil & vinegar & season with salt & pepper.
Gently fold the tomatoes, onion, cilantro & olives into rice. Add vinaigrette & toss well. Season with salt & pepper. Serve
