Ingredients

  • 1 lb. carrots, scraped and grated
  • 1 1/4 cups chopped onion
  • 10 3/4 oz. can cream of mushroom soup
  • 1 cup corn bread stuffing mix
  • 3/4 cup sour cream
  • 1 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp pepper
  • Pinch of sugar
  • 6 tbsp. margarine, melted
  • 2 eggs, beaten
  • Paprika (optional)

Preparation

Step 1

In a large bowl, mix together carrots, onion, soup, stuffing, sour cream, lemon juice, salt, pepper, sugar and butter. Add eggs and blend well. Pour into greased 9x13 inch baking dish and sprinkle with paprika if desired. Bake in a 350 degree oven 45 minutes. Serves 8-10.
