Ingredients

  • 1 medium onion, chopped
  • 1 T. water
  • 3 small potatoes, peeled and cubed
  • 2 medium carrots, sliced
  • 3 (14 1/2oz) chicken broth
  • 3 C. water
  • 2 T. parsley flakes
  • 2 t. basil
  • 1 t. oregano
  • 1 garlic clove, minced
  • 1/2 t. pepper
  • 1 (15 1/2oz) great northern beans, rinsed and drained
  • 1 (15oz) pinto beans, rinsed and drained
  • 1 (15oz) garbanzo beans, rinsed and drained
  • 3 C. chopped fresh spinach

Preparation

Step 1

In Dutch oven, saute onions in water. Add the next nine ingredients. Simmer uncovered until vegetables are tender. Add beans and spinach, heat through.
