EGGPLANT****Roasted Eggplant - 4 Points

I roasted eggplant this way for a pasta dish, which turned out awful, but the eggplant itself was yummy when it came out of the oven.

02/07/12 - UPDATE - You must do this in the large oven, on a non-stick baking sheet. I tried it in the Breville on a parchment lined sheet and it did not achieve the same crispiness as the first time.

Ingredients

  • 1 or 2 small eggplant, cut into 1/2" squares (about 1 1/2 cups cubed)
  • generous pinch of red pepper flakes
  • 1 clove garlic, minced
  • sea salt and pepper to taste
  • 1 tablespoon EVOO

Step 1

* Combine eggplant with remaining ingredients in a bowl and drizzle with oil, mixing well.

* Preheat oven to 400 degrees. Spread eggplant evenly on a parchment-lined baking sheet and cook for approximately 35 minutes, until eggplant is golden. Serve immediately.
