Ingredients
- 1 cup grated carrots
- 1 cup grated or cooked zucchini
- 1 cup flour
- 1/2 cup wheat germ
- 1/2 cup sugar or 1/4 cup honey
- 1 tsp vanilla
- 6 eggs

Preparation
Step 1
Separate eggs. Beat yolks and sugar or honey until light and creamy. Add grated carrots, zucchini, flour, nuts, vanilla. Beat whites until stiff. Fold into mix. Pour into an 8-by-8-inch glass cake dish. Bake in 350 F or 180 C oven for 45 minutes. This batter may be used to make cupcakes.
