Ingredients
- 1 egg
- 1/2 cup salad or vegetable oil
- 1/2 cup sugar
- 1/4 cup evaporated milk
- 1/2 tsp pineapple extract or juice
- 2 cups sifted all-purpose flour
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup wheat germ
- 1 cup crushed pineapple, well drained
- 1 cup grated zucchini, undrained
- 1/4 to 1/3 cup seedless raisins, soaked in boiling water, then drained

Preparation
Step 1
Beat egg, add salad or vegetable oil, sugar, evaporated milk and pineapple extract or juice, and blend well, then stir into egg mixture just until moistened. Gently stir in well drained pineapple, undrained zucchini and raisins. Spoon into greased muffin tins, filling only 2/3 full and bake in preheated 400 F oven for 20 to 25 minutes.
