Ingredients

  • 3 cups apples, peeled and grated
  • 1/2 cup superfine sugar
  • 4 eggs
  • 1/2 stick unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 cup walnuts
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg, freshly grated
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon anise seeds

Preparation

Step 1

1. Preheat the oven to 350 and place a rack in the middle. Coat an 8 ½ inch loaf pan with nonstick baking spray. Set aside.

2. In a large bowl, toss the apples with 2 tablespoons of the superfine sugar. Add the eggs, butter, oil, and vanilla and stir to combine.

3. In a separate large bowl, stir to combine the flour, walnuts, remaining superfine sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg, allspice, and anise, if using.

4. Gently fold the liquid ingredients into the dry ingredients with a flexible spatula.
