Ingredients

  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 pound lean pork tenderloin, cut into 2” x 1/2" strips
  • 2 cloves garlic, pressed
  • 1 cup low sodium chicken broth
  • 1/2 cup orange juice
  • 2 tablespoon cider vinegar
  • 1/2 tablespoon brown sugar
  • 2 medium carrots, sliced
  • 1 tablespoon cornstarch
  • 1/2 cup sliced green onions
  • 1/2 pound egg noodles, cooked and drained

Preparation

Step 1

In a small bowl, combine cumin and pepper; add pork and toss to coat. Heat the oil in a large skillet over medium-high heat; add pork and garlic and sauté for 2 minutes or until browned. In a small bowl, blend broth, orange juice, vinegar and brown sugar; pour off 1/4 cup and reserve. Pour remaining broth mixture into the skillet with the pork and garlic. Add the carrots, bring to a boil then reduce heat to medium; cook for 7 to 8 minutes. Blend corn starch into reserved broth mixture; add to skillet, stirring constantly until thickened. Add green onions; bring to a boil and simmer for 1 minute. Toss with cooked noodles. Serve immediately.

SERVING SUGGESTION: Serve steamed broccoli spears on the side.
