Ingredients

  • 4 chicken breasts, skinned, boned, and cut into large chunks
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup parsley, chopped
  • 1 (6 oz) can tomato paste
  • 1/4 cup red wine
  • 1/4 cup chicken stock
  • 1/2 tsp mixed Italian spices
  • 1/2 lb mushrooms, sliced
  • 2 tbsp olive oil

Step 1

Sauté chicken in olive oil in a nonstick Dutch oven type pot. When chicken is lightly browned, add the onion, garlic, and parsley. Continue to stir until onion is limp, but not browned. Add the tomato paste, wine, and chicken stock. Mix, cover, and simmer 45 minutes. Add the mixed Italian spices and sliced mushrooms. Cover and turn off the heat. Allow to “set” for 5 minutes, then serve. Wonderful with noodles or rice.
